Batch A4 Tech Sheet

Batch A4 is our largest batch to date, at 2580 litres. We achieved this scale not by changing or expanding our production methods, but by compiling 5 production runs made between autumn 2018 and Spring 2019. This process was proposed by Atenogenes and Jose to maximise efficiency and reduce the burden of certification, which can be a time consuming and costly process. We were excited to taste the results, and can confirm that the process has created an exceptionally well rounded mezcal – blending the light citrus notes of Batch A1 (characteristic of a winter production run) with the richer tones of Batches A2 and A3 (produced in the warmer months). It’s fortunate that we love it, because there’s a lot of it!
