Batch AN8 Tech Sheet

The long-awaited re-stock of our OG Ensamble has finally landed, and she’s an absolute beauty!

 

Ensamble AN8 is composed from two oven loads of Espadin and Madrecuishe, fermented and distilled once separately, and then united for the second distillation. This is a technique Atenogenes has used many times before. But AN8 is different in two ways:



XL Fermentation - normal artisanal mezcal fermentation is between 5 and 8 days. Atenogenes often ferments for closer to 12 days. But these two batches were bubbling away for 23 and 26 days respectively. A monster sesh which has contributed high concentrations of esters to the distillate, evident in notes of raspberry, cherry and fig. 



2 Year Shishe Maturation - Atenogenes and Jose allowed their shishe - 20% ABV juice from the first distillation - to rest for over 2 years. This extended spell of maturation between distillations is virtually unheard of, so it's hard to say the exact impact, but the coherence of flavour and rich mouthfeel of the spirit are the likely results. 


The combination of these two factors has created what is easily the best batch of our OG Ensamble since the halcyon days of 2019's Ensamble A3. It's got the piney freshness and grassy vetiver typical of Atenogenes, but it comes with bags of red fruit - raspberry and cherry - and a generous helping of fig jam. Theres an increased salinity and a luscious, creamy mouthfeel to tie it all together. An instant icon.
